This particular amaranth species boasts ornamental beauty, featuring branching spikes in a rich burgundy hue. Primarily used as a dye plant, it is known for producing vibrant pink textiles and paper. Its edible leaves offer high nutritional value and can be harvested when young for raw consumption, or before flowering for steaming or sautéing. However, it is not recommended for use as a grain amaranth.
