Paiute Gold Tepary Bean is a flavorful, fast-cooking heirloom with deep cultural roots. Originating from the Southern Paiute, specifically the Shivwits band, this variety has been cultivated for its resilience in arid environments. The small, flat beans range in color from mustard to brick and are packed with rich, nutty flavor.
These highly drought- and salt-tolerant beans grow on low, half-runner plants that produce 5–7 beans per pod. Adapted to clay soils and dry conditions, Paiute Gold does not tolerate excess moisture, though this particular strain has performed better under standard irrigation than other teparies we’ve trialed. The beans retain their shape when cooked, making them perfect for soups, stews, and traditional dishes. Be sure to harvest promptly, as they readily self-jettison when mature.
